Hillis Custom Processing began with a fateful encounter between a young man with a dream and a seasoned expert ready to pass on his legacy.
In 2016, Luke Hillis found himself at a crossroads. At just 23 years old, he was working at Bridgestone, but his heart longed for something more.
Luke's roots ran deep in the soil of Tennessee, and he spent much of his teenage years working at a local deer processing facility.
It was there he developed an appreciation for the art of butchery and the satisfaction of providing quality meat to his community.
One day, God intervened in the form of a conversation — a chance encounter that would change the course of Luke's life forever.
He heard about an opportunity to purchase Cope Custom Slaughtering, a beloved institution that had served the community for over 36 years.
With a heart full of ambition and a vision for the future, Luke seized the moment, embarking on a journey that would shape not only his destiny but that of his family as well.
Luke immersed himself in every aspect of the business, under the guidance of the previous owner, who graciously shared his decades of wisdom and expertise.
For two months, he apprenticed under the watchful eye of a master, learning the intricacies of meat processing, the nuances of customer service, and the delicate balance of tradition and innovation.
But it wasn't just technical skills that Luke acquired during this time—it was a profound appreciation for the craft, a deep respect for the land and animals, and a commitment to upholding the values of integrity and quality that had defined Cope's for generations.
Since taking the reins, Hillis Custom Processing has not only upheld the legacy of Cope's but has breathed new life into the business, expanding operations, and diversifying offerings to meet the evolving needs of the community.
